








Lentil Coconut Curry Mix
One of our customer favorites! This cozy curry is rich in flavor but mild in heat. It cooks up thick and comforting and is perfect served over rice or with your favorite flat bread. For a soupier version, simply add extra broth or water.

Ingredients
Organic Yellow Lentils, Organic Green Lentils, Organic Red Lentils, Organic Garlic, Organic Onion, Organic Curry Powder [Organic Coriander, Organic Turmeric, Organic Mustard, Organic Cumin, Organic Fenugreek, Organic Paprika, Organic Cayenne, Organic Cardamom, Organic Nutmeg, Organic Cinnamon, Organic Cloves], Sea Salt
Stovetop Instructions
Lentil Coconut Curry:
Add package contents into a large pot with 3 cups of broth or water. Bring to a boil, then partially cover and reduce to a simmer. Cook for about 40 minutes, until lentils are tender and the mixture thickens into a curry-like consistency.
Stir in 1 can of coconut milk and simmer for 10 more minutes. Turn off heat and finish with chopped cilantro and a squeeze of lime.
Serve warm over rice or with flatbread.
For a Soupier Option:
Double the broth or water (6 cups) for a comforting lentil coconut soup.
Instant Pot Instructions
Lentil Coconut Curry:
Add the contents of the package and 3 cups of broth to the Instant Pot. Close the lid, set the valve to sealing, and cook on Manual (High Pressure) for 15 minutes. Allow pressure to release naturally.
Once pressure has released, carefully open the lid. Stir in one can of coconut milk and set to Sauté mode. Simmer for 5–10 minutes to blend the flavors. Turn off heat and finish with chopped cilantro and a squeeze of lime juice.
Serve warm over rice or with flatbread.
